Heat the oil on a skillet at medium heat. Put the panko on a plate and place the pieces of fish to cover them with panko. Fry them until golden brown (about 5 minutes) and put them on a paper towel to drain excess oil.

Technically speaking, fish ceviche is not cooked since cooking requires heat. However, ceviche is not raw. The process of denaturation – soaking the fish in citrus juice for ceviche – changes the flesh of the fish from raw to firm and opaque, as if the fish has been cooked with heat.

You want it to just be opaque and starting to “cook” through. You don’t want it actually flaking and falling apart. For fish sliced 1/4 inch thin, as we’ve done, 20-30 minutes is ideal. Marinate the ceviche in the fridge and then serve as soon as it’s ready.
Can I cook leftover ceviche?
Because the fish has been marinated in an acidic mixture, ceviche should be safe to eat for about two days when stored in the fridge. However, the texture will continue to change as the acid in the citrus juice breaks down the protein, which is why we don’t recommend trying to make leftovers out of ceviche.
